Dutch Baby Pancake
3 organic eggs
2/3 cup organic milk
2/3 cup Napoli Antimo Caputo flour (Italy)
2 dashes Dean Deluca nutmeg
zest from 2 lemons
splash of Nielsen-Massey vanilla (Tahiti)
4 tablespoons butter Delitia of Parma (Italy)
Heat oven to 450 degrees. Mix in a bowl the flour, salt, nutmeg
and lemon zest. Beat eggs until pale about 5 minutes. (In a rush: put eggs
in a covered jar and shake for 5 minutes.) Pour eggs, milk and vanilla
into bowl with flour and mix thoroughly.
Heat a metal skillet and melt butter on stove for 3 minutes on
low, swirl butter to coat edges of pan then pour egg mixture evenly and bake for 19 minutes. It should rise around the edges and sometimes the center.
Serve warm with lots of lemon juice from the above lemons and powdered sugar.
